Elizabeth Hutchcraft is a Registered Dietitian and Certified Diabetes Educator. Having worked in hospitals during the past 25 years and observing the tragic effects of uncontrolled diabetes, as well as observing firsthand the frustration experienced by family members and friends diagnosed as diabetic, Elizabeth made the commitment that eventually led to her desire to become a Certified Diabetes Educator. She is a member of the American Dietetic Association and the American Association of Diabetes Educators. She received her BS and MS degrees from Southern Illinois University-Carbondale. Elizabeth and her husband Joe reside in Southern Illinois where she still works as a registered dietitian for a rural hospital and sees patients in private practice with a group of successful Family Practice physicians.

APPLE -1 very small (2-inch diameter)

BANANA – ½ small (6-inch)

BERRIES – 1 cup whole berries

CANTALOUPE – ¼melon

GRAPEFRUIT - ½

GRAPES – 15pcs

KIWI - 1small

ORANGE – 1small

TANGERINE - 1medium

WATERMELON - 1cup chunks

 Food Portions equal to 15 grams carbohydrate.

BREAD – 1 slice

CEREAL, CORNFLAKES – ¾ cup

CEREAL, RAISIN BRAN – 1/3 cup

CORN, WHOLE KERNEL – ½ cup

ICE CREAM - ½ cup

PASTA - 1/3 cup

POTATO, BAKED – ½ medium

POTATO, MASHED - ½ cup
